Low Carb Japchae
What is Japchae? It’s a sweet and savory dish made up of stir-fried glass noodles, meat and veggies. Doesn’t that sound delicious?? Now you can make it at home and stay on that low carb lifestyle.
Everytime I go to a Korean BBQ restaurant I always have to order their Japchae. I love the sesame flavor with veggies, meat and of course, the glass noodles. This dish is also so easy to customize for your own liking because you can add your fave vegetables, maybe some tofu and you can pick your own protein too. Now how did I make this dish low carb? Mix all the sauce ingredients until sweetener is dissolved. Set some sesame seed aside for garnish.
Add 2 Tbsp of sauce to the meat and 1 Tbsp to mushrooms. Mix and let it soak.
Heat olive oil in a medium pan. cook onions and carrots until tender (2 – 3 min), season with salt and pepper turn off heat and add scallions. Set aside and wipe the pan with paper towel.
Heat olive oil in a large pan, cook meat until it starts to turn brown, add mushrooms salt and pepper. Cook until there is no more pink left on the meat.
Rinse Miracle Noodles with cold water in a strainer. Heat the pan used for veggies and fry noodles until water evaporates. Add 2 Tbsp of the sauce. Mix thoroughly and remove from heat.
Blanch spinach, season with salt and pepper.
In a serving bowl, start with miracle noodles and add all the other ingredients on top. Pour additional soy sauce mix on top to taste. Garnish with sesame seeds.
