Avocado is such a versatile ingredient. You can use it as a dip, eat it by itself or use it as a dressing. It’s full of nutritional values. Not only do they contain more Potassium than bananas, they’re also loaded with fiber. That’s why we added this recipe to your 7 Day Kickstart Challenge!

Creamy Avocado Dressing Recipe
Ingredients:
Prep time: 15 minutes, 6 servings
- 2 Avocados
- 1 Tbs whole plain yogurt
- 1 handful cilantro
- 1 handful mint
- 1 tsp lemon juice
- salt & pepper to taste
- In a blender, place all ingredients
- Blend until smooth
- Salt & Pepper to taste
- Jar and place in fridge for use throughout the week
