This low carb shrimp and cauliflower grits is my new go-to comfort food. It’s spicy, cheesy and all around dreamy. You won’t regret making the switch!
Low Carb Southern Comfort
We’re making comfort food a little healthier so you can indulge in it even more. I never really knew what shrimp and grits were until I moved to Texas and now I wish I had more of it sooner.
I love spicy food and this combo of cajun seasoning with cheesy cauliflower rice is just perfect. The blend of cream cheese and parmesan is a little sweet and sharp and it compliments the spicy shrimp. If you don’t like spicy food, you can always use half of the seasoning suggested or if you really like spice then go on and measure with your heart. I love creating low carb versions of comfort foods and when they turn out really good, I get a little boost of confidence about my cooking too. So enjoy and remember to share food with the people you love!

Shrimp & Cauliflower Grits
Ingredients
Cauliflower Grits
Olive oil
1/4 c water
2 1/2 c cauliflower rice
3 Tbsp cream cheese
1/4 c grated parmesan cheese
salt & pepper to taste
Cajun Shrimp
1 lb peeled and deveined tail-on (or off) medium shrimp, raw
1 Tbsp cajun seasoning
1/2 Tbsp garlic
1/2 Tbsp butter
juice of 1/2 lemon
salt & pepper to taste
green onions for toppings
Instructions
In a medium pan, heat olive oil, add cauliflower, salt & water. Cook covered, medium heat for 10 minutes or until soft and water has evaporated.
Remove from heat, stir in cream cheese and parmesan. Add salt and pepper to taste.
In another pan, melt butter and add garlic. Cook garlic until you can smell the aroma. Season with salt.
Add shrimps and cajun seasoning and cook in medium heat. Toss shrimp until pink then remove from heat and add lemon juice. Salt and pepper to taste.
Divide the grits in shallow bowls. Top with shrimps and sauce and garnish with green onion.
